Can we add in a forum within the course?  I need my students taking the course to be able to add feedback, 100-200 word comments, and send me papers they have written. 

Unfortunately, we don't provide this natively in myUdutu - though have you considered FlockPod?  It is a fairly simple and inexpensive way to attach forums to any web page - it should work with myUdutu (just embed the link in some text).
